This Vegan Broccoli Soup with apple and coconut milk is a starter with a delicate and slightly exotic flavor.

The recipe below is the light one, if you want a richer, but more caloric version, you can add coconut milk and if you agree to switch to the vegetarian version, you can also add sour cream.

I must say that the lighter version is excellent, indeed, maybe I prefer it.

In this recipe, broccoli is used whole, including the stems and leaves.

Vegan Broccoli Soup with apple and coconut milk, silky smooth texture, full of taste and extra light!

Ingredients

  • 600 gr (20 ounces) broccoli (even the hardest parts such as stems and leaves can be used)
  • 1 organic apple
  • 1 spring onion
  • 1 unpeeled garlic clove, crushed
  • 100 ml (1/2 cup) coconut milk (double quantity for the non-light version)
  • 250 ml (1 cup) boiling water or vegetable broth
  • 1 teaspoon salt
  • 1 tablespoon extra virgin olive oil (double quantity for the non-light version)
  • 1 handful pistachios, optional
  • 1 pinch of chili powder

Instructions

    1. Wash the broccoli, divide it into tops and cut the stalk into small pieces.
    2. Wash the apple, remove the core and cut it into small pieces.
    3. Also wash the spring onion and slice it thinly, including the green part.
    4. In a large pot, heat the oil, fry the unpeeled garlic clove and the spring onion. Add the broccoli and apple. Cook for 2 minutes, stirring.
    5. Add a few ladles of hot water and coconut milk.
    6. Cook over medium heat for 20 minutes.
    7. Remove the garlic clove and mix everything with an immersion blender until creamy. If it is too thick, add more hot water.
    8. Season with salt and serve with crumbled pistachios and a pinch of chili.
